From the academic
and health industry points of view, there are two
major categories in food: Acidity and basicity.
There is no relevance between the PH value and the
acidic or basic modality of the food (sour tasting
food might not be acidic food). It is determined
by how food becomes acidic or basic after being
digested, absorbed and metabolized.
Foods that produce acidity are foods such as animal
meat, entrails and seafood. Foods that produce base
are foods such as vegetables, tea, wine and vinegar.
Animal meat, entrails and seafood are the major
acidic sources of the human body because they contain
sulfonium (S), phosphorus (P) and chloronaphthalene
(Cl), as for most vegetables, fruit, seaweed, beans
and dairy product are sources of basic because they
contain calcium (Ca), potassium (K), sodium (Na),
magnesium (Mg).
Is vinegar alkalescence? Most people assume the
major component of vinegar is acetic acid and the
intake of vinegar will cause the blood to turn acidic
which will be harmful to the human body. In fact,
vinegar can eliminate acidic lactic acid and pyruvate
(µJ©Ê¸²µå»Ä) within the blood to maintain a normal alkalescence.
Thus, vinegar is an alkalescence food. |
